Specialty Coffee & SCA Ratings
Specialty Coffee refers to coffee recognised for its distinctive sensory qualities, consistency and overall value.
Traditionally, coffees scoring 80 points or above out of 100 under established cupping protocols have been classified as specialty grade.
Today, the Specialty Coffee Association also promotes a broader approach to evaluating coffee quality, considering sensory characteristics and other attributes that contribute to its value.
Understanding Coffee Flavours & Tasting Notes
Coffee tasting notes describe the natural flavours and aromas that can be experienced when drinking coffee.
You may notice flavours reminiscent of chocolate, caramel, berries, nuts, citrus or flowers.
These flavours develop naturally through the coffee variety, growing conditions, processing and roasting.
Roasting Freshness & Storage
Keep your coffee in an airtight container in a cool, dry place, away from direct sunlight, heat and moisture. Avoid storing it in the fridge, where it can absorb moisture and odours.
Brewing & Enjoying SENORA
Whole beans are a great choice if you have a grinder and want to grind just before brewing. If you prefer ground coffee, choose a grind suited to your brewing method from the options shown on the product page.
For filter coffee, a useful starting point is 15–17 grams of water for every gram of coffee. Adjust to taste. Espresso recipes vary with your machine, basket and beans.
Use fresh water, keep your brewing equipment clean and measure your coffee and water for consistent results. Change one thing at a time, such as grind size or brewing time, to find the flavour you enjoy.
